Yanso × Macelleria Sirtori

Two trades, one table.

Macelleria Sirtori is a historic shop on Via Paolo Sarpi, recognised among Milan's historic businesses. Yanso is the charcoal Korean BBQ from Viale Monza, in Loreto. In September 2026 the two met here: the Via Sarpi location is announced as a collaboration between Yanso and the Macelleria, with “meat chosen for Yanso”.

The result is a place where the meat comes from people who know how to choose it and the fire from people who know how to use it. The name on the card says it all, and two lines are enough.

The meat

Sliced to order.

Twenty-one cuts of beef on the menu, from thick picanha to tongue, from skirt to heart, plus thin snowflake beef and the Korean marinades. Seven cuts of pork, with thick and thin belly. Everything arrives at the table raw, cut for the grill.

“It was clear that most of the meat was sliced to order,” writes one of the first reviews. That is the point.
